Lately, I’ve been struggling with something so basic it’s almost embarrassing to admit: eating lunch.

Between running a business, managing our home, school pick-up, and trying to squeeze in a moment of movement or quiet, the window for making (and eating!) lunch disappears before I know it.

So I pick.

A handful of this. A few bites of that.

And then—like clockwork—I’m starving by 3pm.

Sound familiar?

If you’ve ever found yourself too busy to cook but too hungry not to eat, I’ve got you covered. I put together a simple, 3-day lunch plan that requires no cooking at lunchtime, minimal prep, and takes 5 minutes or less to assemble.
